A Tart or a Quiche

I'm chalking this one up to experience. Another one from Nadia Bakes, the Rosti Quiche. I went maverick with this slightly as the recipe called for a mix of potatoes and sweet potatoes for the base. However, getting sweet potatoes during the first lockdown seemed impossible and in the scheme of things less than important so I went with full on potato base.

I think using this method the quiche was missing something but nonetheless pretty good even though I say so myself.

Another cooking success and something new which was enjoyable for us both. Making time for creating is so important for mental health and seeing people enjoy what you produce makes for a great morning!
